Black Bean Mocha Pie

Combining the natural sweetness of dates with healthy and satisfying fats from walnuts and coconut oil, this pie crust will melt in your mouth. The black bean filling provides protein and dietary fibre, in addition to a wealth of vitamins and minerals. The combination of chocolate, coffee, and coconut milk create a creamy, mocha-licious, dairy-free and vegan-friendly pie experience.

Black Bean Mocha Pie

Ingredients:

Crust

  • 1 cup raw walnuts
  • 1/3 cup dates
  • ½ cup rolled oats
  • 2 tbsp cocoa powder
  • ¼ tsp salt
  • 1 tbsp coconut oil, melted

Filling

  • 1/3 cup dark chocolate, chopped
  • ¼ cup pure maple syrup
  • 1/3 cup coconut milk
  • 2 tbsp cocoa powder
  • 1 ½ cup black beans, cooked and cooled
  • ¼ cup dates
  • 2 tbsp instant coffee

Instructions:

Crust

  1. Combine walnuts, dates, oats, cocoa powder, and salt in a food processor and process on high until a grainy dough-like consistency is formed.
  2. Add melted coconut oil and process until well incorporated.
  3. Line a small pie plate (about 7 inches) with parchment paper and press dough firmly into its bottom and sides.
  4. Set aside.

Filling

  1. In a medium pan, warm dark chocolate and maple syrup on low until melted.
  2. Whisk in coconut milk and cocoa powder. Remove from heat.
  3. Combine beans, dates, and instant coffee in a food processor and process on high until smooth.
  4. Add chocolate mixture and process until well combined.
  5. Pour filling into pie crust and refrigerate until set (about 2–3 hours).
  6. Once set, carefully lift pie to remove parchment paper.
  7. Serve topped with crumbled walnuts and a chocolate drizzle.
