The Best Vegan Chocolate Chia Seed Pudding

Ever wonder what all the buzz on chia seeds is about? In addition to being a source of the amino acids that make up protein, chia seeds are also packed with omega-3 essential fatty acids and are a useful source of fiber. On top of all these health benefits, chia seeds also happen to be the main star of some pretty healthy recipes!

A Source of Fiber and Essential Fatty Acids


In general, insoluble fiber such as bran helps keep the gut healthy by moving things along. Viscous soluble fiber helps slow down digestion so that carbohydrates are released more slowly into the bloodstream. It also plays a role in helping the body maintain cholesterol levels already within the normal range.*

Essential Fatty Acids

The essential fatty acids in chia seeds are predominantly in the form of alpha-linolenic acid (ALA). This omega-3 fatty acid helps support cardiovascular health. It can also be converted into long-chain omega-3 fatty acids eicosapentaenoic acid (EPA) to support cognitive and visual health.*

This pudding is also teeming with polyphenols and other antioxidants to help maintain good health, courtesy of the cocoa powder, berries, and fresh mint leaves.

This pudding is a quick vegan dessert packed full of antioxidants, essential fatty acids, and protein. This recipe makes four servings and is also utterly delicious. 


  • 4 servings (1 per person) Vegan Protein formula
  • 4 tbsp cocoa powder
  • 8 tbsp Organic ChiaFactors®
  • 2 cups of almond milk or chocolate almond milk (unsweetened or sweetened, depending on preference)


  • Fresh mint leaves
  • 1 cup fresh or frozen raspberries or blueberries
  • 8 dark chocolate covered coffee beans


  1. Mix almond milk, chia seeds, protein powder, and cocoa powder in a large bowl.
  2. Pour into individual parfait glasses and chill overnight. This allows the seeds to expand and create a pudding-like texture.
  3. Top the chilled pudding with mint leaves, fresh berries, or dark chocolate covered coffee beans.

Most health experts agree that a predominantly plant-based diet has several major advantages for human health, and yet for some, the idea of veganism still looks unappetizing [1]. However, having been a vegan for twelve years, I can happily dispel this myth!
