How to Make Karlene’s Vanilla Pear Oatmeal Bake with PGX®

Karlene’s Vanilla Pear Oatmeal Bake with PGX 

Ingredients: 

2 cups almond milk 

½ cup almond butter 

3 Tbsp maple syrup 

2 tsp vanilla extract 

¼ tsp salt 

1 tsp ground cinnamon 

¼ tsp ground nutmeg 

2 ripe pears, diced 

2 cups old-fashioned oats 

1–2 scoops PGX powder 

 

Directions: 

  1. Preheat oven to 375 °F (190 °C). 
  2. In a large bowl, whisk together almond milk, almond butter, maple syrup, vanilla extract, salt, cinnamon, and nutmeg until smooth. 
  3. Add diced pear and oats, stirring until fully combined. 
  4. Transfer mixture to a 1.5-quart baking dish. Bake for about 35 minutes, or until set and edges are lightly browned. 
  5. Serve warm, optionally topped with extra almond milk, chopped fruit, or toasted almonds.
